Went to Klinik Kita, in front of my office since I'm having a flu. While waiting for consultation, I just grab any available magazine without any cover and began flip thru every page. From fashion to beauty product and lastly to recipe section. There....WHITE CHOCOLATE CREME BRULEE. I took out my Blackberry and snap the recipe.
So, here is the recipe!
Ingredients
1 1/2 cup milk
300ml cream
1 teaspoon vanilla essence
2 eggs
2 egg yolks
1/4 cup caster sugar
1 tablespoon cornflour
125g white chocolate, chopped
1/2 cup castor sugar
Method
Lightly grease 6 x 1/2 cup heatproof ramekins.
In a saucepan, combine milk, cream and vanilla. Heat over medium fire until almost boiling. Do not boil. (This procedure known as scalding).
In a bowl, beat together eggs, egg yolks, sugar and cornflour. gradually whisk in the milk mixture, then return to the saucepan.
Cook for 2 to 3 minutes over a low fire, stirring constantly, until mixture comes to boil and thickens. Cook over low heat for 3 minutes before blending in chocolate. Remove from heat.
Spoon mixture evenly into prepared ramekins, Cover with plastic wrap, making sure plastic touches the surface of the mixture to prevent a skin from forming.
Chill in the fridge overnight, until firm.
Just before serving, remove the plastic wrap and sprinkle sugar evenly over custard. Place under a hot grill until the sugar melts and is golden brown.
