Chocolate Walnut Cookies

Ingredient

250g butter
200g brown sugar
170g castor sugar
2 small eggs
2 tsp vanilla essence
60g cooking chocolate, melted

400g flour
1 tsp soda bicarbonate
1 tsp baking powder

250g chocolate chips
200g almond, walnut or pecan, diced


Method

Preheat oven to 180 degrees Celsius. Line the baking tray with baking sheet or greased with butter.

Beat butter with mixer. Add brown sugar and castor sugar to the mixture. Beat again with mixer.

Add egg to the mixture one by one. Beat for 1 minute on medium speed for each egg added. Then add vanilla essence and follow thru with melted cooking chocolate.

Sieve together flour, soda bicarbonate and baking powder. Add 1 tablespoon of flour to the mixture at a time. Beat until the mixture are well mixed.

Mix in chocolate chips and almond to the mixture.

Using a teaspoon, place the batter on a greased tray and bake in the oven for 15 minutes.

7 Months Old M.A.D.K.

Adran already 7 months old last Saturday. I'm so happy!

2. Start using Cetaphil Cream for his dry skin
3. Start using Elomet Cream (with steroid) to be applied thinly when needed.

Vanilla Cupcakes

Last weekend, we went to Legend Water Chalet with my parent on Thaipusam Day and went back to Seri Kembangan on Saturday. So, on Sunday I baked my usual cupcakes recipe for my aunt and some for my officemate.

Just to share a simple vanilla cupcake recipe.

Ingredients

100g butter
100g sugar
100g flour
2 eggs
1 tsp vanilla essence
1/2 tsp baking powder
chocolate chips (optional)

Method

Preheat oven to 140 degrees Celsius. Line cupcake pans with paper liners.

Combine butter and sugar in a large mixing bowl. Beat for 1 minute on medium speed.

Add egg to the mixture one by one. Beat for 1 minute on medium speed for each egg added. Then add vanilla essence.

Sieve together flour and baking powder. Add 1 tablespoon of flour to the mixture at a time. Beat until the mixture are well mixed.

Fill liners 1/2 to 2/3 full of batter (I prefer to fill in using piping) and add chocolate chips (optional)

Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean.

Cool 5 minutes in pans then remove and place on wire racks to cool completely.

White Chocolate Creme Brulee

Went to Klinik Kita, in front of my office since I'm having a flu. While waiting for consultation, I just grab any available magazine without any cover and began flip thru every page. From fashion to beauty product and lastly to recipe section. There....WHITE CHOCOLATE CREME BRULEE. I took out my Blackberry and snap the recipe.

So, here is the recipe!


Ingredients

1 1/2 cup milk
300ml cream
1 teaspoon vanilla essence
2 eggs
2 egg yolks
1/4 cup caster sugar
1 tablespoon cornflour
125g white chocolate, chopped
1/2 cup castor sugar

Method

Lightly grease 6 x 1/2 cup heatproof ramekins.

In a saucepan, combine milk, cream and vanilla. Heat over medium fire until almost boiling. Do not boil. (This procedure known as scalding).

In a bowl, beat together eggs, egg yolks, sugar and cornflour. gradually whisk in the milk mixture, then return to the saucepan.

Cook for 2 to 3 minutes over a low fire, stirring constantly, until mixture comes to boil and thickens. Cook over low heat for 3 minutes before blending in chocolate. Remove from heat.

Spoon mixture evenly into prepared ramekins, Cover with plastic wrap, making sure plastic touches the surface of the mixture to prevent a skin from forming.

Chill in the fridge overnight, until firm.

Just before serving, remove the plastic wrap and sprinkle sugar evenly over custard. Place under a hot grill until the sugar melts and is golden brown.

I Love You...........


Love this picture. This picture was taken on the way back from Ipoh to Bangi last Monday. Adran felt asleep as soon as we start our journey back.

So, when Man stop for a break at R&R, Adran's woke up. He was smiling to me. I think he is comfortable with his new car seat. We have upgrade to this car seat from his baby carrier cum car seat since the baby carrier cannot cater for his size anymore....his length and shoulder.

Selection of car seat was made by putting him to each car seat and compared his respond to each car seat. He only like two from four of car seat that we choose and this is the cheapest. He knew how to save mummy and papa's money (Actually, another one that he choose was the most expensive...hehehehe).
